     Pork Chops and Apple Kraut

Ingredients
4 T bacon grease
1/2 c chopped onions
1 c chopped celery
32 oz can sauerkraut, rinsed and well drained
3 cups apples, peeled, cored, and sliced
1 T sugar
1/8 t sage
1 t salt
1/8 t pepper
 
2 c apple juice
6 center cut pork chops

Instructions
Salt and pepper pork chops, brown in 2 T bacon grease, using a heavy skillet. Set aside, discard grease. In the same skillet, saute the onions and celery in 2 T bacon grease, using low heat until tender. Stir in the sauerkraut, sugar, sage, salt and pepper. Fry sauerkraut until it browns a bit. Turn off heat. Peel, core and slice the apples. Stir into the sauerkraut. Pour mixture into a shallow roasting pan. Arrange the pork chops in a single layer on top. Pour 1 cup apple juice over chops. Bake in a 350 oven for 2 to 2 1/2 hours or until chops are tender. Occasionally baste the chops with the remaining apple juice. Pour any left over juice over the chops.
