3/4 lb. mozzarella cheese, cut into 1/2 inch cubes
1/3 c. chopped flat leafed parsley
Optional Hoagie Rolls;
2 6 inch Hoagie rolls
1 clove garlic
Instructions
Position a rack in the middle of the oven and preheat to 500.
Arrange tomatoes cut side up on a parchment paper lined baking
sheet. drizzle 2 T. olive oil on top and season with salt & pepper,
roast until tender, about 20 mins. Transfer the tomatoes and any
juices to a large bowl.
Bring a large pot of salted water to a boil. Add the tortellini & cook
according to package directions, adding the green beans for the
last 2 mins. of cooking; drain.
Add to the tomatoes along with the mozzarella, parsley and
remaining 2 T. olive oil; toss and season with salt & pepper.
Hoagie Rolls; Brush with olive oil; season with salt & pepper. Place
in oven during last 5 mins with tomatoes. Rub with garlic clove.

Suggestions
Can sub. penne pasta instead of tortellini.
