     Crawfish Etouffe

Ingredients
2 lbs crawfish tails
2 t salt
1 t black pepper
1/4 t paprkia
1 stick butter
1 1/2 c chopped yellow onion
1 clove garlic, minced
1 1/2 t ap flour
1 3/4 c water
 
1/4 c brandy
3/4 c chopped green onions
2 T chopped fresh parsley
2 t lemon zest
2 t lemon juice
tabasco to taste
3 cups steamed rice

Instructions
Season crawfish tails with salt, pepper, and paprika. Melt butter in a large skillet.
Add crawfish and saute 3 minutes. Add yellow onion and garlic and cook 10 minutes, stirring frequently.
Sprinkle with flour and blend. Add water and next 6 ingredients. Simmer 10 minutes. Serve over rice.
