     Spinach Timbales

Ingredients
2 T butter
1/2 c chopped yellow onion
3 oz pkg cream cheese, softened
1/2 c sour cream
2 (10 oz) pkgs frozen chopped spinach, cooked and drained
2 eggs, beaten
1 t salt
1/2 t black pepper
1/2 t nutmeg
 
1 1/2 c hollandaise sauce

Instructions
Melt butter in a large skillet. Add onion and saute 5 minutes.
Remove from heat. Stir in cream cheese and next 6 ingredients. Divide among 6 greased custard cups. Bake at 325 for 30 minutes.
Invert onto a serving platter and top with hollandaise sauce.
