     Banana Cream Pie

1/2 c granulated sugar
6 T ap flour
1/4 t salt
2 1/4 c milk
1 egg
1 T butter
1 t vanilla
9 inch pie crust, baked and cooled
3 ripe bananas
1 c heavy cream
1 T powdered sugar

Combine granulated sugar, flour, and salt in the top of a double boiler. Gradually stir in milk. Cook, stirring constantly with a whisk, over boiling water for 10 miutes or until thickened. Cover and cook 10 minutes, stirring occasionally.
In a bowl, beat egg. Add a small amount of milk mixture and blend. Add back to double boiler and cook 2 minutes. Remove from heat and add butter and vanilla. Cool completely.
Line pie crust with about half of banana slices. Pour half of milk mixture over bananas. Make a layer of remaining banana slices. Top with remaining milk mixture. Chill several hours. When ready to serve, whip cream and powdered sugar until stiff. Spread over pie.
