1 1/2 lbs spicy smoked sausage, cooked and cut into 3/4 inch thick rounds
Instructions
In a food processor, blend oil, thyme, garlic and red pepper for 1 minute. Pour mixture into large bowl. Add shrimp and let stand 1 hour at room temperature. Remove shrimp and reserve marinade.
Soak 8 bamboo skewers in water for 30 minutes. Thread 1 mushroom on skewer. Hold 1 piece of sausage in curve of 1 shrimp and thread on skewer. Repeat until there are 4 mushrooms, 4 pieces of sausage and 4 shrimp on each skewer.
In a small saucepan, bring reserved marinade to a boil. Arrange skewers on medium high grill and brush with marinade. Grill for 6 - 8 minutes, continuing to baste.
