     Scampi Saute

Ingredients
1 T coarse sea salt or kosher salt
1 lb medium shrimp (about 20) peeled and deveined
1/2 c olive oil
1 T minced garlic
1/2 t crushed red pepper flakes
1 t dry sherry vinegar or white wine vinegar
1/4 c finely chopped fresh parsley
 

Instructions
In a medium bowl, stir salt into 1 cup of water until dissolved. Add shrimp and let soak for 5 minutes. Drain and pat dry.
In a heavy skillet, heat oil over moderately high heat until hot but not smoking. Add shrimp in 1 layers and sprinkle with garlic and red pepper. Cook shrimp, turning once, about 1 minute per side. Do not overcook. Stir in vinegar and parsley and serve.
