     Lemon Chiffon Pie

Ingredients
4 beaten egg yolks
1/2 cup sugar
1/2 cup lemon juice
1/2 tsp salt
1 envelope gelatin- 1/2 cup cold water
1 tsp lemon peel
1/2 cup sugar
4 eggs whites
1- 9 inch pie shell or graham cracker crust
 
1/2 cup whipping cream

Instructions
Combine yolks,1/2 cup sugar, lemon juice and salt. Cook in double boiler til thick, beating constantly with beater til you can see beater marks in mixture. Add gelatin which has been softened in cold water. Stir til dissolved. Add lemon peel and cool til partially ser. Beat 1/2 cup sugar into egg whites and beat til stiff. Fold into the lemon mixture. Pour into cooled shell. Chill. Top with beaten cream
I put powered sugar and vanilla into whipping cream (after beating until almost stiff...like lots of sugar.)
