     ginger fried rice

Ingredients
1/2 cup peanut oil
2 tbsp minced garlic
2 tbsp minced ginger
salt
2 cups thinky sliced leeks ( challots)
4 cups day old cooked rice at room temp
2 tsp sesame oil
2 tsp spy sauce
 

Instructions
heat 1/4 cup oil over med heat. add garlic and giner. stir occaisionally until crisp and brown. with a slotted spoon transfer to paper towel and salt lightly
reduce heat to med- low and add 2 tbsp oil and leeks. cook about 10 min stirr occaisionally until tender not brown. season lightly with salt
raise heat to med. add rice. cook stirring well until heated. season with salt. add 4 tsp soy sauce and sprinkle with garlic and ginger
Serving Suggestions
original recpie calls for 4 fried eggs - serve 4 bowls of rice one each with a fried egg on top
