1 1/2 C. Whole Corn Kernels at Room Temp

1 Cup Jiffy Cornbread Mix

1 C. Shredded Sweetened Coconut

1 Whole Egg (Not the shell)
|
|
2 Egg Yolks
|
|
2 Tbsp. All-Purpose Flour
|
|
1 Tbsp. Sugar
|
|
1 tsp. Pura Vanilla Extract
|
|
1/2 tsp. Cinnamon
|
|
|
|
1/8 tsp. Nutmeg
|
|
Vegetable or Corn Oil (Enough to deep fry)
|
|
Large Cast Iron Skillet

CAUTION If you roll the mix into balls prior to deep frying, they will be very soft in the center.
|

For crispier fritters, do not form mix into any shape prior to frying. Just spoon it in!
