     Lemon Crumb Bars

Ingredients
1 (18 1/4-ounce) package of lemon or yellow cake mix
1/2 cup butter, softened
1 egg plus 3 egg yolks
2 cups finely crushed saltine crackers (4 ounces)
1 (14-ounce) can eagle brand sweetened condensed milk
1/2 cup lemon juice
 

Instructions
Preheat oven to 350. Beat cake mix, butter and 1 egg in large cowl with mixer until crumbly. Stir in Saltine crumbs. Set aside 2 cups crumb mixture. Press remaining crumb mixture on bottom of greesed 13by9-inch baking pan. Bake 15 to 20 minutes or until lightl golden.
Beat 3 egg yolks, eagle brand and lemon juice with mixer or wire wisk. Spread over prepared crust. Top with reserved crumb mixture. bake for 25 minutes longer or until set and top is golden. Cool. Refrigerate within 2 hours. Cut into bars. Store in frig
