     Homemade Potato Corn Chowder

Ingredients
4-6 slices bacon
1 lb potatoes, peeled and diced
2 cups chicken broth
1 medium onion peeled and diced
2 cups frozen corn
1 1/2 cups milk (or substitute 1 quart half and half and omit heavy cream)
1 cup heavy cream
Salt and pepper to taste
 

Instructions
In large pot cook bacon over medium heat until crisp. Drain on paper towel. Remove all but 1 T of fat and saute onions and potatoes for 5 minutes
Add broth (heat broth to warm before adding to pot). Bring to boil. Reduce heat and simmer for at least 10 minutes.
Crumble bacon, and stir in the corn, milk and cream to broth. Simmer for 15 minutes stirring frequently. Season and serve.
Serving Suggestions
You can thicken the soup by smashing some of the potatoes.
