     Chocolate Peppermint Bars

Ingredients
Layer 1
2 oz. unsweetened chocolate
1/2 cup butter
2 eggs
1 cup sugar
1/2 cup flour (sifted)
1/2 cup almonds chopped (optional)
Layer 2
1 1/2 cup powdered sugar
 
3 Tbsp butter
2 to 3 Tbsp cream (whole milk works too)
1 tsp peppermint extract
green/red food coloring
Layer 3
3 oz. unsweetened chocolate
3 Tbsp butter

Instructions
Layer 1 Melt chocolate and butter. Cream eggs and sugar. Add flour and chocolate mixture to almonds. Bake in an 8x8 pan for 20 minutes at 350 degrees. Turn oven off. Bake 4 minutes more. ALTERNATIVE- this layer can be substituted by making a batch of your favorite brownie box mix.
Layer 2 Cream butter and sugar. Blend in cream, peppermint and food coloring. Spread on cooked brownie/cake-like layer 1 (still in pan)
Layer 3 Melt chocolate and butter together. Carefully pour over peppermint layer. Chill thoroughly. Carefully cut into small squares.
