2 cups red-skinned potatoes cut into 1/2 inch cubes
1(15-oz) can mixed beans drained and rinsed
1(10-oz) pkg frozen mixed veg
1 cup zucchini cut
1 bay leaf
1 1/2 tsp italian seasoning 3/4 dried basil and oregano
3/4 tsp sea salt
1/2 freshly ground black peper
Vegan soy parmesan cheese
Instructions
In a large pot, combine onion,celery,and olive oil, and saute over medium heat, stirring often, for 3 min to soften. add garlic and saute for 1 more min.
stir in crushed tomatoes,water,cabbage,potatoes,canned mixed beansfrozen veg, zucchini,bay leaf,Italian seasoning,salt,and black peper. Bring to a boil, cover reduce heat to low and simmer for 25 to 30 min or until veg are tender.
Remove bay leaf, tast and adjust seasoning as desired. Top individual servings with vegan soy parmesan cheese or nutritional yeast flakes.
