Mix 3c. flour, salt, and yeast. Add the warm water and mix.

Cover with saran wrap and let sit overnight in the refrigerator, 12-
16 hours.

Dump onto well floured surface and add flour until not gooey (1/4-
1 C.) Lay on floured towel and fold over bread. Let sit 3-6 hours.

|
Preheat oven to 425 with the dutch oven in it. Dump bread into hot
oven, put the lid on and bake 30 minutes. Remove the lid and bake
another 15 minutes until top is crusty.
