     Three Cheese Stuffed Banana Peppers

Category   Salads - Soups - Sidedishes
Sub Category   None
Servings   4

Ingredients
1 cup shredded mozzarella
1 cup crumbled feta
1/2 - 3/4 cup shredded parmesan
10-12 banana peppers
1 (26 oz) jar spaghetti sauce

Instructions
Preheat oven to 375. Mix the 3 cheeses in a medium bowl. Prepare the peppers by cutting off tops and carefully scraping out the seeds with a knife. Try not to poke holes in peppers.
Stuff each pepper with the cheese mixture, using the end of a spoon or your finger to pack the cheese tightly. After they are stuffed, pour a small amount of the sauce into a baking dish (9x9) to coat the bottom. Arrange stuffed peppers into single layer in bottom of dish. It's ok to lay a few on top if your run out of room.
If you have any cheese mix left, sprinkle on top of peppers. Pour the remaining sauce on top of peppers to cover them completely. Bake, covered, for 30-40 minutes or until peppers are soft and bubbly (make take an hour).
