     Angel Food Cake

1 1/2 c. egg whites 10 to 12 large
1 1/2 c. sifted powdered sugar
1 c. sifted cake flour
1 1/2 t. cream of tarter
1 t. vanilla
1 c. white sugar

Sift powdered sugar and flour together 3 times using waxed paper or foil.
Separate the eggs, add the cream of tarter and vanilla to them. Beat until soft peaks form. Begin adding the white sugar 2 T. at a time. Beat until stiff peaks form.
Sift about 1/4 of the flour mixture onto the top of the egg whites and fold in gently. Repeat this process with the remaining flour mixture.
Pour into an ungreased 10 inch tube pan. Bake on the lowest rack in a 350 degree oven for 40 to 45 minutes. Immediately invert the cake and let cool on the counter. After the cake is cool, loosen the cake from the pan using a serrated knife. Makes 12 servings.
