     Lemon Meringue Pie

Ingredients
1 1/4 cup sugar
3 T cornstarch
1 1/2 cup of boiling water
3 egg yolks slightly beaten
1/4 cup lemon juice
1 baked pie crust
3 egg whites
6 T sugar
 

Instructions
Cream 3 egg yolks and sugar in mixing bowl. In separate bowl combine cornstarch and lemon juice. Mix till smooth. Add this mixture to eggs.
Place all of this into boiling water stir and mix until thick. Pour into Baked pie shell.
For meringue- Beat egg whites on high. Add sugar. Place on top of baked pie.
