Pork Chops with Mustard and Marmalade Recipe

Category   Entrees - Maindishes
Sub Category   None

Ingredients
5 1/4 oz (lean) boneless pork chops
1 teaspoon oil
2 tablespoons chopped onion
1 clove minced garlic
1/4 cup green pepper, chopped
1/2 cup water
1 teaspoon (reduced sodium) soy sauce
1 tablespoon (no salt added) ketchup
1 tablespoon (reduced sugar) orange marmalade

1 teaspoon (spicy brown) mustard
1/2 teaspoon sesame oil

Instructions
Preheat broiler. Spray broiler rack with cooking spray. Broil chops 4 inches from heat source until rare, about 2 minutes per side. Set aside.
Heat oil in a nonstick frying pan. Add onion, garlic and green pepper. Sauté until onion is translucent. Add water, soy sauce, ketchup, marmalade, mustard and sesame oil. Bring to a simmer and stir until smooth.
Add pork chops and cover with sauce. Cover and simmer for 5 minutes. Check often and add water if necessary to prevent burning.
