     Broccoli Corn Bread

Ingredients
1/2 cup butter melted
1/3 cup chopped onion
1 teaspoon salt
3/4 cup cottage cheese
1 package 10oz frozen chopped broccoli thawed and drained
4 eggs, lightly beaten
1 package (8-1/2 oz) corn muffin mix
 
Instructions
In a bowl combine butter, onion, salt, cottage cheese, broccoli and eggs. Blend. Stir in muffin mix.
Pour into a greased 13 inch x 9 inch x 2 in baking pan
Bake at 400 for 20-25 minutes
cut into squares and serve.
