Boil 3 good sized sweet potatoes (enough to make 3 cups), unpeeled, until tender all the way through. When potatoes are cool enough to handle, peel and place in large mixing bowl. Mash well with fork. Stir in sugar, butter, eggs, vanilla, pumpkin pie spice, and sour cream. Mix well. Add salt and baking soda and stir.

Spread the mixture in a 1 1/2 quart baking dish and bake uncovered at 350 degrees for 35-45 minutes. You want it to be set like pumpkin pie would be when you bake it. I use a knife and check it by poking it in the middle of the casserole, if it comes out clear, its done.
