     Jack Fish

Ingredients
1 lb fish (I use salmon)
salt/pepper to taste
2 med tomatoes, chopped
4 tsp green onion, chopped
1/2 tsp basil
2 tsp butter
1/2 c shredded montery jack cheese
 

Instructions
preheat oven 450 F. Place fish in lightly greased baking dish. Sprinkle fish with salt/pepper. In a bowl, combine tomato, onion, and basil; spoon over fish.
Dot with butter. Bake 20 minutes or until fish flakes easily. Turn off oven. Sprinkle fish with cheese and return to oven to melt cheese.
Serving Suggestions
Mashed Faux-tay-toes and steamed broccoli.
