     Herby Veggie Chicken

Ingredients
4 boneless chicken breasts
2 tablespoons chopped parsley
2 tablespoons chopped basil
ground pepper and salt
~1/2 cup chopped onions
dried rosemary
1/4 cup veggie broth
1/4 cup dry white wine (or add another 1/4 cup veggie broth and some lemon juice)
1 tablespoon chopped garlic
 
1/2 lb small mushrooms (or broccoli, or both!)
1 cup diced tomatoes (can be omitted)
2 tablespoons olive oil

Instructions
Sprinkle chicken with salt and pepper. Heat the oil in a heavy pan and sauté the chicken for 8 to 10 minutes, until golden brown all over. Add the onion, rosemary, thyme, garlic, and mushrooms. Cook, stirring, for 5 minutes, then spoon off the fat.
Add the wine, broth, tomatoes, and cook, scraping off the browned bits on the bottom of the pan. Simmer uncovered for 10 minutes.
Bring the sauce to a brief boil to reduce it a bit. Stir in the parsley and basil.
Serving Suggestions
Over rice or quinoa with a side of salad or fresh (heated) bread
