1 box Zatarains New Orleans Style Black Beans & Rice
1 head Romaine lettuce, chopped
cheddar cheese, shredded
limes, quartered
flour tortillas, warmed

Instructions
Cook pork until done. Shred. Prepare marinade by mixing together marinade mix, water, vinegar, oil and brown sugar. Pour over shredded pork and simmer.
Prepare rice mix as directed. To make dressing, mix together in a blender- 2 C. mayonnaise, 1 clove garlic, 1/2 bunch cilantro, 2 T. water, 2 T. white vinegar, 1 jalapeno pepper (without seeds), 1/4 t. pepper & 1/2 t. salt. Set aside.
To assemble salad, place a warm flour tortilla on plate and place a layer of shredded cheese on top. Quickly put a scoop of rice and bean mixture followed by a scoop of pork. Next, layer with a good portion of shredded lettuce. Drizzle with dressing and place a quartered lime to the side of the salad (to be squeezed over the salad before eating).
