     Balsamic Mandarin Salad

Ingredients
4 C. mixed salad greens
1 kiwi fruit, peeled and sliced
1/2 (11 oz) can mandarin oranges, drained
1/2 small red onion, chopped
1 T. extra-virgin olive oil
1 T. balsamic vinegar
2 T. orange juice
 

Instructions
Arrange 1 cup of salad greens on each of four serving plates. Scatter the kiwi slices, mandarin oranges and red onion over each salad. In a small bowl, whisk together the oil, vinegar and orange juice. Drizzle about 1 TBSP of the dressing mixture over each salad.
Serving size- 1/4 of recipe (1 1/4 cups salad) Calories- 74 Fat- 3.6 g
