     Herbed Rice Meatloaf

1 lb. extra lean ground beef
1/2 C. uncooked instant white rice
1/4 C. finely chopped onion
1/4 C. seeded and minced red bell pepper
1 clove garlic, minced
1 tsp. salt
1 T. minced fresh herbs, such as rosemary, basil, chives, sage or a combination of any listed
2 tsp. Worcestershire sauce
1 egg, beaten
1/4 C. ketchup
1/4 C. skim milk
1/4 C. dry bread crumbs

Preheat the oven to 350. Spray a 5 x 9 loaf pan with nonstick cooking spray. In a large bowl, combine beef, uncooked rice, onion, bell pepper, garlic, salt, pepper, herbs. Worcestershire sauce, egg, ketchup, milk and bread crumbs. Mix by hand until well combined, being careful to to over mix. Shape the mixture into a loaf shape without packing too tightly. Place in the loaf pan; bake for 60 minutes or until the internal temperature of the loaf is 160. Remove from the oven and let sit for 15 minutes before serving.
