     Qormeh Sabzi

Ingredients
1 large onion, halved and sliced
1/3 cup butter
1 1/2 lb. stew lamb cut into 1/2 to 3/4 cubes
2 bunches scallions or green onions finely chopped
1 bunch coriander (or parsley), finely chopped
1/2 cup fresh fenugreek, finely chopped
1 tsp. turmeric
1 1/2 tsp. salt
1/2 pepper
 
1/2 cup cooked kidney beans or October beans (1/2 can)
1 1/2 cup water
2 dried lemons or 2 dried limes
1/4 cup of lemon juice

Instructions
Saute' onion in butter. Add meat and lightly brown on all sides.
Transfer to a medium-size pot that has water, scallions, coriander, and fenugreek already in it. Add seasonings, and meat and onions with all the drippings. Bring to a boil; reduce heat and simmer over medium heat for 40-50 minutes.
Add dried lemon or limes and kidney beans; simmer 15 minutes more.
Add lemon juice. Keep on a very low heat for another 15 minutes or until ready to serve.
Serving Suggestions
Serve over Persian Rice!!! Chopped up cucumber in Plain Yogurt with a pinch of salt as a side dish!!! Warm some Pita bread and unsalted butter!!!
