Category   Desserts - Breads
Sub Category   None

Ingredients
1 cup peanut butter
1 cup sugar
1 egg
1/2 cup crushed pine nuts
1/2 cup sugar for rolling (optional use 1 tsp of cinnamon with the sugar to give it a spicy flavor,

Instructions
Preheat oven 350. MIx together first three ingredients until well incorporated. Now mix in 1/4 cup of the pine nuts. Take tablespoon size amounts of the dough and roll into balls. Roll the balls in sugar and place on a cookie sheet about 2 inches apart. Using a fork, press down cookies and sprinkle the tops with remaining crushed pine nuts. Bake for 10-11 minutes until just going golden brown.
DO NOT OVERBAKE or they will get really hard and crispy (but if that happens, then they are really good for dipping in hot chocolate!)
Serving Suggestions
Very easy and different. They are a smash hit whenever they are served. GREAT with hot chocolate. (I usually double this)
