     Southwest Scrambled Eggs

Ingredients
3-4 eggs
1/4 small tomato, diced
1/4 orange bell pepper, diced
1/4 red bell pepper, diced
1/4 small onion, diced
1 small can of corn, drained
Milk
Cheese - Grated
Garlic
 
Jalapeno (if desire)
Cayenne Pepper (if desire)
Cumin
Salsa
Avacados, sliced
Salt and pepper

Instructions
Dice up the bell peppers, tomatoes and onion. Place frying pan onto burner and turn on to medium heat - add bell peppers, corn and onions with some butter to sautee.
In a large bowl, whisk together eggs, 1/2 teaspoon salt, 1/8 teaspoon pepper, and 2 teaspoons milk until well combined. Add egg mixture to pan and cook until scrambled. Stir in cheese until melted.
Mix in the spices to taste. Scramble until fully cooked and ready to eat. Add some salsa & sliced avacodos to the scrambled eggs and you're ready to eat!
Serving Suggestions
Add some ground sausage to this mixture for yummy breakfast burritos
