     Sundried Tomato Pesto

Ingredients
1/2 cup walnuts, lightly toasted
2 cloves garlic
1 8-oz jar sundried tomatoes in oil, undrained
1/2 cup grated Parmesan
1/4 cup kalamata olives, coarsely chopped
1 cup fresh basil leaves
1/2 cup fresh parsley leaves
1/4 tsp red pepper flakes
grated lemon zest
 
lemon juice
salt and pepper to taste

Instructions
Combine nuts and garlic in food processer; pulse until finely chopped; add tomatoes pulse until smooth.
Add remaining ingredients and process until smooth paste forms; add additional oil/water until pesto is of desired consistency.
