To make peanut butter pudding, whisk first 2 ingredients and a pinch of salt in large saucepan to blend; gradually whisk in 1 3/4 cups milk, then 1/2 cup cream; whisk over medium heat until mixture comes to a boil; boil until thick, whisking constantly, about 30 seconds; whisk in peanut butter, and continue whisking until thick, about 1 minute longer; remove from heat, whisk in vanilla; pour into 6 one-cup dishes.
To make chocolate pudding, whisk next 3 ingredients and a pinch of salt in saucepan; gradually whisk in remaining milk, then 1/2 cup cream; whisk over medium heat until mixture comes to a boil; boil until thick, whisking constantly, about 30 seconds; whisk in chocolate, and boil until chocolate melts, whisking about 1-2 minutes longer; remove from heat, whisk in vanilla; cool 5 minutes and spoon over peanut butter puddings.
Chill puddings until completely cold, at least 2 hours.
