     Spinach Cheese Puffs

Ingredients
1 cup milk
1/2 cup butter
1 tsp salt
1 cup all purpose flour
4 eggs
1 cup Swiss cheese, shredded (4 oz)
1/2 cup Parmesan
10 oz package frozen chopped spinach, thawed and squeezed dry
 

Instructions
Preheat oven to 375.
Heat milk, butter and salt in saucepan until butter melts and mixture comes to a boil; remove from heat; add flour all at once and stir with a wooden spoon until mixture leaves the side oif the pan and forms a ball.
Beat in eggs one at a time until dough is glossy and smooth; stir in cheeses and spinach (dough may be refrigerated at this point and baked at a later time).
Drop dough by tablespoons onto baking sheet lined with parchment or silicone baking mat (or lightly greased); bake at 15-20 minutes until puffed and lightly browned.
