2 large firm apples,such as cortland,empire,or red delicious
2 large granny smith apples
2 tablespoon lemon juice
8 stalks celery
1 cup raisins
1/2 cup chopped walnuts
1/2 cup reduced fat mayonnaise
16 lettuce leaves
Instructions
Wash the apples.Using the knife on the cutting board,cut the apples in half and remove the seeds.cut the apples into 1/2 inch cubes and place in a bowl.sprinkle with lemon juice.
Remove any celery leaves and wash the celery. slice into 1/4 inch slices.
Combine the apples,celery,raisins,walnuts,and mayonnaise.Mix well with a wooden spoon.
Wash and pat dry the lettuce leaves.place 2 lettuce leaves onto each serving plate. divide the salad into 8 equal servings,placing each serving on the lettuce leaves.Serve immediately
