2 tsp baking soda

1/2 cup shredded coconut

1/2 cup raisins
|
|
2 cups grated carrots
|

1 apple, unpeeled, shredded

8 oz can crushed pineapple in juice, undrained

1/2 cup chopped walnuts or pecans
|

3 eggs
|
|
1/2 cup oil
|
|
1/2 cup unsweetened applesauce
|
|
1 tsp vanilla extract

Instructions |

|
Preheat oven to 350; line 18 muffin cups with paper liners.

Combine dry ingredients in large bowl; add coconut, raisins, carrot, apple and pineapple, stir to blend; stir in nuts.

|
Whisk together eggs, oil, applesauce and extract; pour into dry ingredients and mix until moistened.
|
|
|
Fill muffin cups to the top with batter; bake 35 minutes until toothpick inserted into center of muffins comes out clean.
