     Conch Fritters

1 egg
2 Tbl water
1 1/2 - 2 lbs ground conch
3 Tbl chopped onion
2 small, hot red peppers, seeded, finely chopped
1/2 tsp ground pepper
1 tsp salt
1/4 tsp thyme
1 cup flour
1 tsp baking powder

Place conch in a large bowl. In a small bowl, beat egg and water together, add to conch. Add onion, peppers and seasonings. Fold until combined.
Sift in flour and baking powder. Mix well. If mixture is too thin, add flour for desired consistency.
Heat frying oil to 375. Drop dough into oil by the teaspoonful and fry until golden brown.
Serving Suggestions
Serve with a Caribbean dipping sauce or cocktail sauce.
