2 (26oz) jars low-fat marinara (I like classico or ragu)
1 (16oz) carton fat free cottage cheese
1/4 cup egg substitute (or some egg whites)
1/4 cup shredded parm cheese
1 tbsp dried parsley flakes
1/4 tsp black pepper
1 (10oz) package chopped spinich, thawed and drained
8 cooked whole wheat lasagna noodles
2 cups (8oz) shredded park-skim mozz cheese
Instructions
preheat oven 350
coat large skillet w/ cook spray
med-high heat until hot
add extra lean ground turkey, onion and garlic
brown,stirring to cumble
add 5 3/4 cup marinara sauce
cook 5 minutes, stirring
remove from heat
combine cottage cheese, egg, par,, parsley, pepper and spinich- stir well
spread remaining marinara sauce in bottom of 13x9 dish,coated with cooking spray. Place 4 noodles over sauce, top with cheese mix and half of mozz. spoon half of turkey mix over mozz cheese. place noodles over turkey mix. Top wth the rest of all mixes. BAKE 50 minutes.
This has a lot of cheese which can carry a lot of extra fat. Some think I am crazy but I try to always buy fat free or reduced fat cheese. It really cuts back on the calories.
