     North Carolina BBQ

Ingredients
2 tablespoons oil
2 pound pork shoulder roast
1/2 cup ketchup
1/4 cup apple cider vinegar
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
cider vinegar as needed
hot sauce as needed
 
6 hamburger buns
Large frying pan
Cook's fork
Saucepan
Heavy baking dish with lid
oven mitts

Instructions
Preheat oven to 300 degrees F. Heat the oil over medium heat in a frying pan. Add the pork roast and brown all sides,using a cook's fork to trn the meat.It will take about 3 to 5 minutes. Using the cook's fork,remove the meat from the frying pan and place in the heavy baking dish. In the saucepan,mix the ketchup,1/4 cup of vinegar,garlic powder,Sugar,salt,and cayenne pepper.Bring to a boil over medium heat.pour the sauce over the roast and cover the dutch oven.
Bake for 2 hours.Spoon the sauce over the meat several times while it cooks.The meat is done when it starts to separate from the bone.Remove the meat from the baking dish and let it cool for 20 minutes.When the meat has cooled,pull it into bite-sized pieces.Season to taste with additional hot sauce and vinegar.
serve on hamburger buns.
