     Spicy Soybean and Black Bean Salad

Ingredients
1/4 cup green soybeans (edamame)
1/4 cup canned black beans, rinsed and drained
1 Italian plum tomato
1/3 medium red bell pepper
1 1/2 tbsp. fresh lemon juice
1/4 tsp. cumin
1/4 tsp. cayenne pepper
1/2 tbsp. olive oil
2 cups lettuce, romaine or lettuce of choice
 
1 oz. vegetarian dairy-free Mozzarella cheese

Instructions
Cook shelled soy beans in boiling water for 5-7 minutes until tender, but still firm; drain and let cool. Rinse and chop tomato, and bell pepper. Whisk lemon juice with cumin, cayenne pepper and olive oil to make dressing. Mix beans with chopped vegetables and dressing until thoroughly combined. Serve on top of lettuce, sprinkled with vegetarian cheese.
