Rinse steaks and pat dry with paper towels. Grate the zest from the lemon and set aside, then squeeze the juice.
Combine the zest, thyme, pepper and salt in a small bowl; stir to mix. Lightly rub both sides of the tuna steaks with oil. Rub the seasoning mix on both sides of the steaks, coating them well.
Warm the oil in a skillet. Increase heat to high and place tuna in the pan. Sear for 1 minute, then turn carefully and reduce pan heat to medium. Sear other side 1 minute more until medium rare. Remove from heat.
Immediately pour lemon juice over steaks. Serve.
