     TOMATO GARGONZOLA SOUP

Ingredients
3 tb unsalted butter
2 chopped large onions
5 chopped garlic cloves
3 tb flour
1/4 cup chardonnay
1 1/2 quartered potatoes
4 cups low sodium chicken broth
1 36 oz can whole peeled tomatoes (save juice)
2 3/4 cup cream
 
3/4 cup gargonzola
1/4 cup chiffonade of basil
2 tsp cider vinegar

Instructions
Melt butter. Add onions. Add garlic. Add flour. Add wine. Add potatoes & broth. Boil then lower heat to simmer x 15 minutes. Add tomatoes, juices, Gorgonzola and basil. Season blender. Add vinegar.
