     CREAMY ENCHILADAS RANCHERAS

Ingredients
1 c. sour cream
1 1/2 c. sm. curd cottage cheese
1 c. sliced green onions
1 7oz diced chiles
12 corn tortillas
oil
9 oz shredded jack cheese
1 avocado sliced (optional)
green enchilada sauce
 

Instructions
Combine sour cream, cottage cheese, green onions and chilies and set aside. Fry each tortilla in hot oil until softened. Spoon 1 cup sour cream mixture onto center of tortilla. Set aside 1/2 cup shredded Jack cheese for topping. Sprinkle filling in each tortilla with remaining cheese.
Roll tortillas and place seam side down in a 13x9 baking dish. Spoon enchilada sauce over filled tortillas. Bake at 350 degrees for 15 minutes or until heated through. Just before serving, top with avocado slices and sprinkle with remaining Jack cheese. Place under broiler just long enough to melt cheese.
