     German Potato Salad

Ingredients
1/4 lb bacon
2 1/4 heaping tablespoon flour
3/4 cup sugar
1 1/8 tsp salt
1/2 cup vinegar
2 cups water
4 lbs medium potatoes
1 tablespoon onion, chopped
1 tablespoon butter
 

Instructions
Cut bacon fine, fry; remove bacon from pan. Reserve bacon drippings.
Mix flour, sugar and salt. Boil vinegar and water. Add flour mixture to vinegar and water. Add flour and vinegar mixture to reserved bacon drippings. Cook and stir until thickened and bubbly.
Boil potatoes with skin on until tender. Peel and slice like coins. Mix together with bacon, flour/water/bacon grease mixture, potatoes, onion and butter.
Serving Suggestions
Serve warm
