     Spinach Latkes

Ingredients
3/4 pound fresh spinach OR 1 10 oz. package frozen spinach
3 eggs beaten
6 tablespoons matzo meal or bread crumbs
salt and pepper, to taste
3 tablespoons grated onions
oil for frying
 

Instructions
wash and check spinach carefully. steam in tiny amount of lightly salted water for 5 minutes drain well and chop mix with the remaining ingredients and let rest for 10 minutes; form into patties; and drop by tablespoons into hot oil and fry on both sides until golden brown
