Trim just the tops of the okra stems and around the edges of the stalks. They have a sticky liquid that seeps out if prepared too far ahead, so trim them immediantly before cooking.
Add the oil to the pan and fry the okra, stirring constantly, for 2 minutes.
Add the garlic and ginger and fry gently for a minute, then add the spices and cook for another minute or so, stirring constantly.
Pour in about 1 1/4 cups water. Season well, cover and simmer for about 5 minutes or so until the okra feel just tender.
Finally, mix in the fried almonds and serve piping hot.
