MIXING- Measure all of the ingredientes and double check you have everything right. Don't skyp this step often people got it wrong from the beggining without notice it. First mix the all purpose flour and the bread flour into a mixing bowl. Add the brown sugar and the salt, and add 1 cup of the water. And add the yeast at the end (since I Used instant) ~~~If you're going to use Active dry yeast mix the content of 1 package of active dry mix into the 1.5 cups of warm water, stir and wait for the mix to foam a little and add the mix to the flour like I did. (don't use extra water, the water you use to make the yeast mixture it's the same I used with my instant)

KNEAD DOUGH- I use a Kitchen Aid mixer with the hook atachment, but you can knead the dough by hand. Knead for about 8 minutes (kitchen Aid)The dough it's going to be soft.Place the dough into a clean and greased bowl and let it rise, wait until it double it's size or about 1 hour.

FORM PRETZELS- Prepare the mixture of warm water and baking soda and let aside. Take pieces of the dough (about 10 or 12) and roll each piece into a rope (the longest the better). Twist into a pretzel shape, and dip into the baking soda solution. Place on covered greased cookie sheets, and let it rise 20 minutes.

Bake at 450 degrees for about 10 minutes. Brush with the butter and sprinkle with coarse salt, sugar or cinnamon.

Shape into different forms. You can make a pretzel dog by rolling a hot dog link in to the dough rope and bake. Have fun
