     Apple Sausage Quiche

Ingredients
9 inch deep dish pastry shell
1/2 lb lean seasoned sausage, italian or breakfast
1/2 small onion, chopped
4 tbsp butter
4 tbsp brown sugar
2 apples, peeled, cored, chopped
3/4 cup shredded cheese, cheddar or mont jack
2 egg yolks
2 whole eggs
 
1/2 cup milk or half and half
1/2 tsp parsley

Instructions
Thaw pastry shell. Saute onion in butter until translucent. Add sausage and sprinkle with brown sugar. Break sausage into pieces while cooking. Drain sausage well on paper towels. Place in thawed pastry shell.
Saute apples in a little butter for 2 to 3 minutes. Spead over sausage. Spread cheese over apples.
Beat eggs with dairy product. Pour over mixture in pastry shell. Sprinkle with parsley.
Bake at 350 degrees for about 45 minutes or until tester comes out clean.
