     Red Beans and Rice

Ingredients
2 T vegetable oil
1 med onion chopped
1 can 4 oz chopped green chilies, drained
3/4 c uncooked rice
1 c water
1 can 16 oz light red kidney beans
1/2 c shredded Monterey Jack cheese
1 lb smoked sausage
1 t Tobasco sauce to taste
 

Instructions
In a medium saucepan, heat oil over medium high heat, add onion and chilies and saute 3 mins.
Add rice, water, and boullion cube. Bring to a boil
Reduce heat, simmer covered, 10 mins until rice is tender. Stir in beans, cheese, smoked sausage and Tobasco.
