     Ravioli / Shrimp, Spinich

Ingredients
1 cup flour
1 egg
1/8 cup olive oil
1/4 tsp sea salt
1 1/2 T water
Filling
5 or 6 shrimp cleaned
2T rough chopped spinich
 
2 teasp finely chopped fresh garlic
1/2 cup cottage cheese (lowfat)
1/4 cup grated fresh Asiago cheese

Instructions
For Ravioli dough, mix all ingredients in bowl. Mix for 30 seconds. Turn out onto floured surface. Knead for 2 min until smooth. Form into ball and place under bowl to rest for 20 min. Roll out thin and cut into squares, top with filling and cover with another square. Flute edges gently with fork tines. Move to very well floured surface.
Saute shrimp in olive oil with fresh garlic. Chop shrimp and mix with all remaining ingredients.
