     Lamb & Mint Burgers

Ingredients
2 tbsp redcurrant jelly
1tbsp sweet chilli sauce
1 tbsp balsamic vinegar
2 spring onions
6 tbsp greek style yogurt
4 tbsp chopped mint
2cm piece cucumber, seeds removed & diced
500g lamb mince
4 organic mini pitta breads (optional)
 

Instructions
Mix together the redcurrant jelly, sweet chilli sauce and balsamic vinegar. Put in a small dish and set aside. Cut the green leaves off the spring onions, discard the tough part and finely slice the tender green part. Add to the yogurt with the cucumber and half the mint. Season, put in a bowl and set aside.
Finely chop the bulbs of the spring onions and add to the mince with the rest of the mint. Season well and mix with your hands. Shape into four burgers and grill or griddle for 3 – 4 minutes on each side.
Split the pittas using a sharp knife. Heat in the griddle pan or under the grill for 20 second on each side. Fill with the burgers and rocket or lettuce and serve with the relishes.
