Heat oven to 375. Line 9-inch pie plate with pastry. Place on baking sheet.
Heat the oil in a large skillet over medium-low heat. Add the onions and 1/2 tsp each salt and pepper and cook, stirring occasionally, until soft, 5-7 minutes. Stir in the parsley.
In a large bowl, whisk together the eggs, half-and-half, nutmeg, and 1/4 tsp salt. Stir in the onion mixture and the cheese.
Pour the egg mixture into the crust. Bake until a knife inserted into the center comes out clean, 35 to 40 minutes. Let sit for 5 minutes before serving.
